Hospitality & Catering Level 2
What we aim to achieve
How will I be assessed?
WJEC Level 1 / 2 Hospitality and Catering builds
on the skills and knowledge developed in Food
Technology through Years 7 to 9. The course will
give students a good foundation for further catering,
hospitality, food or nutrition related study. It will
also provide a wide range of skills and knowledge
for working in the hospitality and catering industry,
which is Britain’s fourth largest industry and
accounts for around 10% of the total workforce.
• Unit 1 - The Hospitality and Catering Industry
(External Exam)
You will demonstrate your understanding through
an 80-minute written exam which is 40% of your
qualification. Questions will require short and
extended answers, based around applied situations.
You will build on your cooking skills throughout
the course producing a number of dishes set by
the teacher. This will include both sweet and
savoury dishes, including jointing a whole chicken,
filleting a fish, side dishes and accompaniments
and presentation techniques. This course would
suit you if you are interested in working in catering,
hospitality or the food services industry or if you
enjoy cooking and learning about food preparation.
Course outline
This is a two-year course of study and is awarded
on a scale of Level 1 Pass to Level 2 Distinction*.
(Level 2 Pass equivalent to a GCSE grade 4), Level 2
Distinction* (grade 8.5).
The course will explore two areas:
• The first is the Hospitality and Catering Industry
including types of establishment and service; Job
roles and training; Customer requirements; Food
Safety, Legislation and the law; Health and safety;
Food related causes of ill health and the role of the
Environmental Health Officer.
• The second unit will of focus on Hospitality and
catering in action and will cover the importance
of nutrition; menu planning; preparing, cooking,
presenting and serving 2 dishes in response
to a brief and evaluating your cooking skills and
performance.
• Unit 2 - Hospitality and Catering in Action
(Coursework)
Your controlled assessment task will be a response
to a brief set by WJEC completed over 12 hours,
including a 3 ½ hour practical cooking assessment.
This is worth 60% of the qualification.
120 marks in total (66 marks for the final practical
cooking exam and 54 marks for the supporting
written work)
What skills do I need?
An interest in food and cooking is essential along
with a desire to learn more about the catering
industry. You will be willing to work both individually
and as a team and you should be prepared to practise
your cooking skills at home. The written controlled
assessment is a large element of this course so you
will also need to be hard working, consistent and
able to meet deadlines. You will need to be able to
complete both practical and written work and follow
the health and safety rules in the kitchen.
What else do I need?
It is essential that you provide your own ingredients
for cooking on days when they are required. There
are a range of supportive revision guides for sale,
costing around £12 -15.
